The roast has a deep floral aroma with hints of caramel and nutmeg, rich buttery flavor with a honey-like texture and bittersweet finish.


Place: Sulawesi is one of the four primary islands in Indonesia lying north of Java and east of Borneo. The coffee comes from the south of the island where the highest elevations are found. People: The Toraja are an ethnic grop indigenous to a mountainous region of South Sulawesi, Indonesia. In addition to coffee, Torajans are known for their colorful wood carvings and massive peaked-roof houses known as tongkona. As a building a tongkonan is very laborious and detailed work, the whole family usually participates in the construction of their home. Process: Both semi-washed (more common) and fully washed coffees are produced in Sulawesi. Ours is semi-washed, which is alo called "wet hulled" in Indonesia. The processing generally yields a more sophisticated and controlled coffee than that of Sumatra, but shares the body and character that results from this method. The coffee is a bit more delicate in the roaster than other Indonesian coffees and requires extra care to obtain just the right color and profile. The beans are very large, yet surprisingly dense. Parings: Great with Chocolates: Chocolate Chunk Muffin or Espresso Cream Cheese Brownie.
8 oz: Makes approximately 25 cups of coffee 12 oz: Makes approximately 35-40 cups of coffee 16 oz: Makes approximately 50 cups of coffee BREWING TIP: Use cold, filtered water and a clean machine. GRIND only as much as you need for one cup or one pot of coffee. CHOOSE the correct grind. Fine for espresso, medium for automatic drip, coarse for French Press. MEASURE ground coffee to taste. Start with two level tablespons of ground coffee per six ounces of cold filtered or bottle water. STORE in an airtight container to protect the flavor and aroma and ensure rich, fresh tasting coffee. Do not freeze or refrigerate.
