This extraordiary tea from the northern mountains of Thailand is artfully processed in eight careful steps before ever reaching your cup. The two leaves and a bud are hand-plucked and withered in the sun, then the shade, before being only partially oxidized. This prized tea is then roasted slightly to develop flavor and color, hand rolled and kneaded, and dried further before entering the final drying stage. The result is an unmatched Oolong tea with a delicated fruit and honey taste and light apple and floral aroma.
Aroma: Light apple & floral
Flavor: Sweet & delicate
Begin with fresh, bottled or filtered water. Bring the water just to a boil. Place one teaspoon of tea leaves per 8 oz cup of water into a teapot or infuser or place one tea bag directly into a 12 to 16oz cup. Pour water directly over the tea leaves or tea bag. Note that over-steeped tea will become bitter. For stronger tea add more leaves rather than infusing longer than recommended.
Green Teas: 3 minutes

Oolong Teas: 5 minutes
